William Fevre started making wine in 1959 but his family had lived in the Chablis region for over 250 years. He started as a small project with only 7 hectares of land, but he had access to some of the best sites in Chablis. The wines were an instant success.

Over the years the domain has gathered up more holdings, and with nearly 80 hectares of land, today Fevre is considered a large producer in Chablis. Despite the large holdings, the wines at every level are always sensational. The bulk of the holdings are at the village level, with a smaller percentage at the 1er cru and grand cru levels. This is where the wines really shine.

What makes Chablis so special? The soil, of course. 150 million years ago this was a shallow ocean, and as the ocean dried up, all the fossilized sea shells were left. Whenever there is any debate on terroir-- and whether or not it is possible to taste soil in a grape--the naysayers just need to taste Chablis to come over to the terroir side. One taste is enough. Chablis tastes like the ocean—the sea breeze on the north shore of Hawaii, the salty sea hair. It is filled with lemon, and salt and minerals. The acid is high, the wine is medium in alcohol, and it is great on its own but also incredible with food—fish, seafood, shellfish, green vegetables.

The 1er cru level is our favorite Chablis, as it’s ready to drink now but you can also stash it away for a few years. You get the complexity of a grand cru with the accessibility of a village level wine.

The grand crus are harder to understand when they are young. Grand cru Chablis is taut and textured. It takes longer to uncover that Chablis like character because it is that much more muscular. But wait a few years, and there is a reward for your patience.

Today I am offering both wines as a set, one to drink now (or in the next 1-5 years) and one to lay down for at least 5 years (up to 15 or 20).  2021 was a GREAT vintage in Chablis, very classic, very delicate, very acidic. It’s one that will cellar well and show well when you finally open it up.
