This fresh, terroir-driven sparkling from the Esteve family, a multi-generation estate based in the hills of Avinyonet del Penedès, Catalunya. It’s made from a blend of 70% Xarel·lo, 25% Macabeo, and 5% Parellada, all grown organically on estate vines at 250–275 meters elevation, rooted in sandy-loam and calcareous soils.

The grapes are harvested at night, gently pressed, then fermented cool in stainless steel. After bottling, the wine undergoes a second, traditional-method fermentation and is aged a minimum of 24 months on the lees, with no dosage added — resulting in a bone-dry, expressive Cava.

In the glass, expect a straw-yellow hue with fine, persistent bubbles. Aromas of citrus, green apple, and subtle orchard fruit mingle with light bready and nutty lees-driven notes. On the palate it is fresh, mineral, and crisp — with lively acidity and a clean, tension-filled finish that reflects its Penedès limestone soils.

Excellent with oysters or shellfish, fresh goat cheese, grilled fish, or light Mediterranean tapas — basically anything that benefits from clean acidity and mineral freshness.
