This fabulous old-school Chablis from Florence and François Bachelier comes from the only Premier Cru in Chablis that faces due south! The vines are around 40 years old and farmed organically on classic Kimmeridgian limestone soils, with low yields to preserve intensity and purity. It’s a textbook Chablis made from 100% Chardonnay using traditional fermentation and aged on its fine lees for 5 to 9 months, in a combination of stainless steel and used oak barrels.
The nose delivers zesty citrus with orchard fruits —think green apple, pear, quince—plus delicate floral notes, overlaid with salty, flinty minerality. On the palate it’s racy and precise, but with a smooth roundness surprising for Chablis—think oyster shell, lemon zest, and marine energy on the finish.
Serve this lightly chilled with oysters, crab, lobster, goat cheese, or a light salad.
