This rare rouge Chassagne-Montrachet is made from 100% Pinot Noir grown on the Domaine Bader-Mimeur estate’s clay-limestone soils, treated sustainably and harvested by hand. Grapes are 100% destemmed, given a cold pre-fermentation maceration, then vinified in wooden vats with gentle extraction — careful punch-downs and pump-overs — before aging 12 months in French oak barrels (about 25% new) and another 6 months in vat prior to bottling.

In the glass, expect a classic Burgundian red: bright ruby color, elegant aromas of cherry, red berries, and a subtle forest-floor notes. On the palate it’s supple and refined — medium-bodied, with silky tannins and bright acidity, leading to a finish with freshness and clarity rather than weight or heaviness.

Pairs beautifully with roast meats, rustic French dishes (pork loin, rabbit, duck), a classic Boeuf Bourguignon, or simply charcuterie and soft cheeses.
