The team picked in three passes (Sept 7, 13, and 15) — the first to preserve bright acidity, the latter two to build ripeness and layered aromatics.

Before pressing, the grapes were foot-tread, enhancing texture and releasing delicate aromatics. Fermentation occurred with wild yeasts in stainless steel and without additions. The wine then rested six months in neutral French oak and stainless steel, remaining unfined, unfiltered, with no SO₂ until bottling — a pure, minimal-intervention take on Albariño.
