Domaine B&B Bouché 'Prestige' Brut Cremant de Limoux NV
This crisp, elegant southern French sparkler channels Champagne finesse with Occitan flair. It’s a blend of 50% Chardonnay, 30% Chenin Blanc, and 20% Pinot Noir, drawn from 25-year-old vines planted on clay-limestone soils from various parcels in the historic sparkling wine region around Limoux, in the Languedoc.
Grapes are first cold-soaked, and fermented slowly in stainless steel over about a month, before undergoing secondary fermentation in bottle in the méthode traditionnelle, or Champagne method. The wine then ages 4 to 5 years on the lees before release. Dosage is moderate, at 8 g/L.
On the nose and palate, expect Moroccan preserved lemon, white pear, toasted almond, and herbal notes, with a saline mineral edge. The mousse is creamy and well-integrated; the body is fresh and powerful, with a long, clean finish.
Pair with white fish, scallops, goat cheese, or even sushi. It also makes a delightful aperitif!
