Domaine de Chevillard Mondeuse Savoie 2021
This distinctive Savoie red was crafted by organic growers and winemakers Matthieu Goury and his wife Guillemette Renard. The Mondeuse grapes are grown on steep clay-limestone soils with south/southeast exposure, helping this alpine variety to fully ripen. The 2021 vintage comes from vines averaging about 42 years old, hand-harvested and vinified with native yeasts to reflect both site and lighter-touch winemaking.
In the cellar, the grapes are fully destemmed and fermented in concrete, with the juice poured daily over the cap manually (no punch-downs). After about 30 days on skins, the wine is pressed before finishing fermentation. It is then aged for 24 months in used 225L French oak barrels and another year in bottle before release — all with minimal sulfur and no fining or filtration.
In the glass it shows fresh red and blue fruits — think cherry, cranberry, and plum — with hints of wild herbs and undergrowth that nod to its Alpine roots. The palate is medium-bodied with fine tannins, bright acidity, and a savory edge that keeps it vibrant and food-friendly, while oak aging adds subtle depth and polish.
