François Pinon 'Buvez du Bon Pinon' Vouvray 2023
This beautifully crafted Vouvray Sec from the Loire Valley is made from 100% Chenin Blanc. Julien Pinon revived this special bottling as a tribute to his great-grandfather Camille, using vines planted in 1945 on unique black flint (silex noir) soils. The old-school label is the original from Camille's release back in the early 1950's.
The grapes are hand-harvested, direct-pressed, and spontaneously fermented in very old port barrels, where the wine then ages for a full year on its lees. This “sec” style is bone dry, with less than 1g per liter of residual sugar.
In the glass, you’ll get aromas of apple, quince, beeswax, white flowers, underpinned by smoky silex minerality. On the palate it’s bright and focused, with zesty acidity, and a vibrant, long finish that hints at serious aging potential.
Try it with oysters, shellfish, or light pork dishes.
