The Pinot Noir is fermented with whole clusters, while the Poulsard and Trousseau are destemmed to preserve brightness and finesse. The wine ages roughly 10 months in a mix of large old foudres and used barrels. The wine is bottled unfiltered and unfined, with minimal added sulfur.
