This Roussillon white from up-and-coming winemakers Thomas Mangin and Romain Torredemer marries sun-kissed depth with limestone freshness. This bottling is named for the horse used to plow their oldest rows of Macabeu in their village of Vingrau, in the foothills of the Pyrenees.

The organic grapes of 55% Grenache Gris/Blanc and 45% Macabeu are fermented gently and vinified mostly in steel, with only 20% in used demi-muid barrels to preserve balance.

In the glass Papillon is pale yellow, with aromas of white-fleshed fruit, garrigue herbs like fennel and mint, and hints of anise. The palate is generous but grounded—plenty of texture, crisp acidity, and a lingering saline-mineral finish.

Serve with coastal Catalan dishes like grilled fish, gambas a la plancha, or herby vegetable dishes.
